We know from experience how people's taste buds differ when it comes to smoked fish - some people like delicate, light flavours with 'fresh fish notes', while others like it intensively smoked with a wood-fire smell.
To cater for this range of tastes, we carry a number of brands and different strengths to suit all palates. In the Cotswolds we're lucky enough to have several excellent local smokeries - Severn and Wye and Coln Valley . We also buy from traditional smokeries such as St James's Smokery in Scotland and a traditional haddock-smoker in Grimsby
